His staple wine is the rose for which he is well known in Corsica. He owns 3 hectares that are planted on a plateau high overlooking the Mediterranean which is composed of pure limestone and some clay. The rose is 90% Sciacarellu and 10% Moresconu). It is 12.5% alcohol, displaying great minerality and freshness.
The wine is pressed gently and in contact with the skins for only a few hours before the juice is drained and put into stainless steel vessels. It is fermented with indigenous yeasts, bottled and released in late Spring. Christian’s vision is to get Bonifacio a designated AOP in the future. Pale and slightly salmon with a fine brightness. First floral, then red fruits. Tastes like fresh strawberry. On the palate it is vivacious, precise, and long.
