Casa Raia Toscana "Bevilo" Rosato

With a primary focus on the regeneration of vineyard soils, through the use of green manure to help increase organic matter, Pierre-Jean and Kalyna work vines roughly 40 years of age with both organic and biodynamic practices. Here, on predominantly clay and limestone soils, vines are planted on terraces with a mostly northern exposure. At 360 meters in altitude, grapes remain above the fog line while exposure to the Tramontana and Sirocco winds reduce humidity and the threat of mildew during the warmer growing months.
In the cellar, Pierre-Jean and Kalyna focus on low intervention winemaking by forgoing the use of commercial yeast, and other chemicals in winery, and instead prefer spontaneous fermentations and zero sulphur. From Sangiovese Grosso planted in 1997, the property's flagship Brunello spends four years aging in barrique and five months in bottle, verses the minimum two years in barrel and four months in bottle regulations require.
The “Bevilo” Toscana (roughly translated to Drink it!) is a blend of Sangiovese Grosso, Cabernet Sauvignon and Merlot. The wine sees two years in barriques with another two months in bottle before release, while the "Bevilo" Rosato represents the best of the “Bevilo” Rosso but for those that prefer not to wait that long...
