A sleeper selection, the 2008 Châteauneuf-du-Pape cuvée Reserve (70% Grenache, 20% Syrah and 10% Cinsault from 65+ year old vines) reveals a ruby/plum color as well as notes of roasted meat juices intermixed with black cherries, black currants, licorice and garrigue. There is rigorous selection of the grapes during the vendage. Vinifaction lasts for three weeks, with the temperature of fermentation around 30 to 32oC . Aging: 16-18 months in (70%) foudre and (30%) demi-muids. 60-75 year old vines. ourced from the two vineyards of La Grenade and Pradel, 1981 marked the very first vintage of Roger Sabon Réserve.
This wine has flavors of red and black fruit and spices. It will keep well for at least 20 years and will exhibit hints of mushrooms and leather over time. Pairs well with veal, white meats, mushrooms, cow’s milk cheeses or Banon.
